Description: Chun Mee, Zhen Mei or Chun Mei is a Chinese green tea. It’s produced only in China, mostly in Anhui and Jiangxi Province. In Chinese, Chun Mee means "precious eyebrow," poetically referring to the distinctive long, curved leaves of this delicate tea.
 
Chun Mee is a pan-fired tea. Pan-fired teas have a less vegetal and nuttier flavor, that can be light or more intense, depending on how the teas was made. For example. lung ching or Dragon well is also nutty, but with no smokiness and very light compared to Chun Mee.
 
Chun Mee is a light, mild Chinese green tea with a characteristic buttery, plum-like flavor. It has a slightly astringent taste and a clean finish. Like all green teas, Chun Mee is made from the leaves of the camellia sinensis plant, and is pan-fired soon after harvesting in order to halt oxidation and preserve its bright green color.

In strength and color, Chun Mee is quite similar to Gunpowder, but with more smokiness. Chun Mee green tea has a bit more astringency than other green teas, and is suitable for drinking with sugar, honey or even milk. Because of its strong flavor, Chun Mee is great for flavoring and scenting. It’s often used in some African countries for making mint tea, similar to Moroccan mint tea made with Gunpowder tea leaves. This tea makes for a great daily green tea.

If you enjoy Gunpowder tea, Chun Mee is the tea you might like too. Even though Chun Mee is stronger than many other Chinese green teas, high quality tea products, if you brew them properly, will never taste very bitter. However, a slight dose astringency is normal in many green teas.

Chun Mee is a popular tea among green tea lovers and newcomers alike, with a mellow flavor and a small amount of caffeine. In general, Chinese green teas are lighter than their Japanese counterparts, which are known for their rich, grassy flavor. Our organic Chun Mee brews up into a pale yellow liquor, and has a subtly sweet flavor, with a fuller body than white teas but lighter body than most other green teas. Brewing Guide: We recommend using glass-based or porcelain tea ware. Rinse tea cup and teapot with hot water. Use about 2 grams of tea leaves (1-2 teaspoons) for every 150ml of water. Steep tea leaves in hot water at 70°c (158°F) to 80°c (176°F) for 1 minute for the first and second brewing. Gradually increase steeping time and temperature for subsequent brewing.
