Description: Jun Shan Huang Cha tea is a yellow tea from Junshan Island of the Hunan Province in China. It is one of Chinese Famous Teas. Junshan yellow tea is only produce using the tea leaves from the tea garden at the Junshan Island, which is located in the middle of Dong Ting Lake of Hunan Province. The best quality Jun Shan tea is called as Jun Shan Yin Zhen. The production of Jun Shan Yin Zhen demands that tea pickers pluck only buds while the golden brick is made with the material picked as one bud and one leaf system.

Jun Shan yellow tea is processed similarly to green tea, but after the first firing it undergoes steaming followed by a prolonged “resting” wrapped in cloth or paper. This stage called men huan may last a day or two before the final firing. The moist pause allows the leaves to breathe back their own aromas and prevents the astringency associated with some green teas. It also gives the leaves a very slight yellow cast. The initial firing halts most of the oxidation, but similar to white tea it is very slightly oxidized.As a result, it produces bright yellow color, refreshing flavor and sweet and mellow taste that are the characteristics of yellow tea.

Brewing Guide:
Use each cake for 200ml of water. Quickly rinse the tea leaves with hot water at 80 degree Celsius, and then gently pour hot water at 80-85 degree C into the teapot, let it brew for 2 minutes. The leaves are good for 5 infusions. Add a little more time for each subsequent infusion.
