Some of the most coveted white tea from China comes from the Fuding region of Fujian Province, China. White Tea from its true origin, Fuding, Fujian province is the most sought after tea in China. This tea was picked in April, sun dried and stored, and compressed into cakes in winter for easy storage and transit.
 
In the West its often thought that fresh white tea from the year of harvest is best. Yet in the East this is not necessarily true. In fact, the current trend in China and other parts of Asia is the appreciation of all things aged. Like aged puerh, aged white tea cakes are an experience all their own. As it ages, the taste becomes smoother and sweeter. As these White Peony cakes age more subtle and complex flavors appear.
 
Our White Peony cakes ia made of aged leaves harvested from wild and have more woody and smooth taste than is typical of White Peony with a slightly sweet finish. It has a taste of dates and hint of cantaloupe, smooth, full bodied, very soothing. It can be paired with a variety of food. A great every day tea for all seasons. What is more, it is easy to brew and forgiving.
 
 
Brewing Guide: Use 1 tablespoon per 6 oz cup. Heat water until steaming (170º F). Let steep 3-4 minutes. Good for multiple infusions.
