Unruly and unbound, the rebellious tea trees of Long Jing are found in the wildness of the mountains around Longjing Village, West Lake, Hangzhou City, Zhejiang Province, extending their limbs the way they want and growing as tall as they can. Teas grown on the mountainsides may receive natural shading from the abundant clouds and mist. Usually, the local farmers will go pick up the tea when they are in a slow season of farming. This wild green tea tastes will light, without any hint of bitterness.
Carefully plucked by hand, the wild, big, naturally grown leaves from these trees take over your cup. They infuse your thoughts with a bold sense of calm amidst the chaos. Antioxidant-rich, this forest tea yields a gold-green cup that will take you on a trip through wildflower and earthy notes on the wild side of life.
These flat, feather-shaped tea leaves result from it being pan-roasted by hand, a process that helps preserve its fresh, spring-like aroma while imparting a strong scent of toasted grass. Beautiful, delicately flattened leaves unfurl to yield a roasted chestnut aroma and light-yellow infusion. A complex yet subtle flavor with toasted nutty and creamy notes and buttery and sweet mouthfeel. There is a nice tension between sweet and astringent notes in this tea.

Brewing Guide: We recommend using 3 grams of the leaf per 7-8 ounces of water. A temperature of 80°C (176°F) is a good starting point. Steep for 2 to 2.5 minutes. Longer steep times will yield a stronger cup taste, and a more pungent flavor with some increase in the tea's astringency or "bite". Drain the leaves, leave them dry and save them for additional steeps.
