The Wuyi Mountains are a mountain range located at the prefecture Nanping, at the northern border of Fujian province with Jiangxi province, China. The mountains cover an area of 60 km2. In 1999, Mount Wuyi entered UNESCO's list of World Heritage Sites, both natural and cultural. It is the most outstanding biodiversity conservation zone of Southeast China. Numerous types of tea are produced around Mount Wuyi, it is the origin of the real Da Hong Pao tea and Lapsang souchong, further described in Wuyi tea.
This Oolong Tea is a highly floral flat oolong tea. To produce the unique Oolong, every single twig of tea leaves is plucked from a single shrub of tea tree. Much intensive manual work has to be carried out during the fermentation process in order to strictly control the degree of fermentation: the leaf is fermenteded only at the edges, which will oxidize while the middle part of the leaf remains intact, preserving the natural green fresh note. The dry leaves give a very strong fruity flavor like dried mango with flowery note. When brewed, the liquor gives the same aromatic profile. For real single bush Oolong, after brewing, the dried mango flavor still remains in the brewed leaf. The aroma is long-lasting, and can remains up to 8 brewing; the fruity aroma gets thinner after brewing for several times. When brewed, the tea produces a very bright, lustrous and clear liquor, in yellowish orange color.
To Enjoy: Place one teaspoon per cup into an infuser, filter or teapot. Switch the kettle off, before it boils, when you hear the water rumbling. Add the hot, but not boiling, water and infuse for 3 minutes. Serve immediately or remove leaves to prevent spoiling.
