Hairy Crab is a direct translation of the Chinese name Mao Xie given most likely due to the fine downy hair that covers its leaves. The tea is entirely handmade in the Anxi District of the Fujian Province from its own tea plant varietal. It is produced in a manner similar to the Ti Kuan Yins, but has a less flowery aroma and taste; instead, it is distinctly reminiscent of ripe peach. This brew is very fragrant with a golden yellow colour. The liquor is sweet and smooth with a lingering aftertaste. It tast like jasmine with a little thick smell.
It features half-open tree performance, dense branches, elliptic leaf profile with needle-shaped lead tip, green leaf color, crisp leaf quality, sharp serrated denticle like the mouth of eagle, and abundant flosses on the leaf back and leaf bud. The soup's color is light green or golden. The leaf's shape is small rounded, the middle is loose-bodied, the head and tail is tine, the sawtooth is deep, dense, sharpen, the leaf has a the main pulse is clear.

To Enjoy: Place one teaspoon per cup into an infuser, filter or teapot. Switch the kettle off, before it boils, when you hear the water rumbling. Add the hot, but not boiling, water and infuse for 3 minutes. Serve immediately or remove leaves to prevent spoiling.
