This traditional high-oxidation version of the classic “Iron Goddess” Anxi oolong varietal. While Tie Guan Yin is one of the most famous and celebrated of all Chinese oolongs, the variety most commonly found these days is the low oxidation “jade” version. This is not only due to the trend among young people for the light floral fragrance of jade oolongs, but the fact that the low oxidation version can be successfully accomplished through the use of machine-assisted roasting and drying techniques. The roasting style necessary to make the old-fashioned Tie Guan Yin is intensive. It requires the tea to be roasted 5 times in 5 days, a grueling process especially as it must be done in small batches.
We carefully select Anxi high mountain Tie Guan Yin as the material and keep it. This tea is roasted in the traditional style manually, it is moderately baked with charcoal. Hand-roasted with charcoal for 24 hours at different temperatures, our Old-fashioned Tie Guan Yin is all deep, dark, rich and delicious with a hint of sweet hazelnut taste. It has bright color, just like the black diamond. recreating the classic caramel, and toasted nut profile of this famous tea.
Emanating from the glorious deep, golden-yellow hue of this exotic tea is a rich, woody smoky taste that is stronger and sweeter than regular oolong tea. Sit back, sip and enjoy the refreshing aftertaste and the fermented, roasted aroma.
Brewing Guide: 5g in 500ml water at 95°C for 2-3 minutes.
