Product Overview
The cultivar we used for Bai Mu Dan belongs to ZhengHe, which located in the North of Fujian. The plantation located in the mountain about 200-800 meters and cover by forest. Someplace is even cover by old grown forest. This area is mostly covered by typically red-yellow soil which is fat and deep and full of phosphorus. The favorable soil makes the tea which plants here with high fragrant and thick mellow characteristic.
Comparing with the FuDing Bai Mu Dan, ZhengHe’s Bai Mu Dan used the traditional process. There are two simple processing procedures for White Peony, one is withering other is baking. But the timing is very difficult to handle. ZhengHe white tea is used nature withering, that means just spread and cooling in the sun or inside the house without using any mechanical equipment such heat wind to accelerate this procedure. By the long time (about 2days) withering, the tea leaf will be light fermented and protect the enzyme activity.
Our Bai Mu Dan belongs to ZhengHe white peony, our tea comes from the tea gardens in SHAO WU, which located in the south foot of WUYI Mountain, This Bai Mu Dan are 100% organic tea. This superb organic tea is made from the uppermost two leaves and a bud, plucked in early spring and withered and dried in the sun before the buds are able to open. The leaves of this organic tea from China range from green to brown with plenty of buds that show a very light green almost grey white color, covered with a delicate velvety down. The pale yellow infusion has a delicate lingering fragrance and a mellow sweetly vegetal taste.
Brewing Guide: We suggest brewing at 80°C for around 3 minutes according to your taste. Bai Mu Dan should be brewed multiple times depending on your taste preferences. As with all white teas, you can experiment with brewing times. Try either brewing this at a lower temperature (70°C) for 4-5 minutes or alternatively at 90°C for 60-90 seconds. Different brewing parameters produce quite different results so experimenting with the water temperature and steeping time is the best way of finding the brewing method that works best for you.
