Cang Shan or “Green Mountain” is where the tea is grown and processed – the Chun Xue or “Spring Snow” refers to the harvest time and the visual of the finished leaf comes with silver buds. It is a rare tea from China. A baked tea has a needle-like shape and silvery white fuzz which brings smoothness to every sip.
Our Cang shan Chun Xue is grown at 800 to 1200 meters above sea level in Anhui province, China. The hand-plucked leaves contain one bud and 2 to 3 leaves. Picking the delicate tea leaves, after picking the tender tea leaves, the fresh leaves are first picked to remove the frostbite leaves and damaged leaves, and to pick out the stalks that do not meet the standard requirements, so as to guarantee the quality of the buds and leaves are even and clean. Then spread the fresh leaves to lose part of the water.
The loss of moisture from baking facilitates the kind of chemical changes that can improve aroma and bring out new characteristics in the leaf. These efforts were the foundation of what we now know as oolong tea. The shaking, rolling, and baking of the oolong process require the steady loss of moisture at each step to bring about the added characteristics. This expanded the tea experience with aromatic and visual appeals.
Typical Cang Shan Chun Xue tea has needle-like leaves and a slight floral overtone. Our Cang Shan Chun Xue leaves nothing to be desired. Harvested in April, it is plucked with one bud and two leaves resulting in a fresh dark/medium green leaf. The infusion produces a pale yellow/green cup color with a floral aroma, luscious buttery texture, soft notes of lychee and delicate sweet grass. The tea, pure and translucent, boasts a roasted chestnut aroma. A pristine clean, light and soft character, sweet floral aroma, and a mellow, savory, vegetal flavor that isn’t bitter at all - like a soft and refreshing spring breeze.
