Dong Ding Oolong Tea, also known as Tung Ting Oolong, is a renowned semi-oxidized tea originating from the misty slopes of Dong Ding Mountain in Lugu Township, Nantou County, Taiwan. The tea is typically oxidized to 20–30% and lightly to moderately roasted, often over charcoal using traditional methods. Its processing gives the tea a unique depth and complexity, making it one of Taiwan's signature oolongs.
The dry leaves are tightly rolled into small, dark green balls. Upon brewing, they gradually unfurl, releasing an elegant floral fragrance with a creamy and buttery texture. The initial taste reveals subtle gardenia or orchid notes, followed by a smooth body that offers hints of sweet milk and stone fruits such as peach or apricot.
As the tea develops across multiple infusions, it expresses layers of roasted nuts, caramelized sugar, and even light woody tones from the charcoal roast. The liquor is golden-amber, with a silky mouthfeel and a lingering honey-like aftertaste. A pleasant throat sensation, or "hui gan," often follows, leaving a clean and refreshing finish.
Brewing Guide:
Hot Brew
Tea-to-water ratio: 3g per 150ml
Water temperature: 90–95°C (194–203°F)
Steeping time: 45 seconds to 1 minute for the first infusion; increase slightly for subsequent brews
Can be infused 4–5 times
Cold Brew
Use 5–8g of tea per 1 liter of cold water
Steep in the refrigerator for 6–8 hours
