Description: This classic white tea is grown in Fujian Province, China, and is known as Bai Mudan, or White Peony. This lot is grown on beautifully terraced hills near the coast, and is hand-picked in April, after the Silver Needle harvest. The traditional varietal—Fuding Da Hao—shows off the tea plant’s down-covered buds and tender young leaves, which are maintained through minimal processing: a simple withering in the sun, or inside with warm air.
Our organic white peony tea is only harvested for a few weeks each year in the northern district of Fujian, China. The process of white tea is quite minimal which includes drying and withering almost immediately after picking. The secrets of the teas withering process varies from region to region in Fujian and depends on climate conditions and family traditions. This prized tea is hand picked bringing only two leaves and a bud form under strict standards passed down from the Ming Dynasty. Our organic white peony has many buds and is fresher and sweeter than most white teas.
This tea is smooth and delicate with plenty of jasmine flavours. A taste sensation for any white tea lover, it combines white peony with the gentle scent of real Jasmine Blossom. Carefully gathered and dried in the early days of spring, this white tea from Fuding in Fujian Province is one of the most revered teas in China. In August, the tea is laid beneath a bed of fresh jasmine flowers for five consecutive nights, balancing the sweet white tea with fresh, fragrant jasmine aroma.
Brewing Guide: use a few tablespoons per serving, and prepare with water below boiling (180° F) to highlight the clean, sweet, and refreshing bean-sprout flavor.
