Zhang Ping Shui Xian is the only black tea which has traditionally been pressed into a mini brick. It is a sweet, very stylish, floral, fruity, malty, tippy black tea made in the eastern part of northern Fujian, China. This slender, slightly twisted, tippy Fujian black tea is produced in the town of Zhang Ping County. Here, gongfu black teas are processed from the oolong cultivar, which is also used to produce the Zhang Ping Shui Xian oolong.
Each brick is roughly 10g in weight and comes in its own individual vacuum sealed packet. Shui Xian Black captures the essence of Fujian’s finest black teas, including its sweet potato aroma, smooth taste, and slightly sweet aftertaste. The tea boasts a deep golden yellow liquor that evolves into a deep blood red with longer brewing. In the cup, the aroma continually changes and shows incredible complexity. Hints of the aroma of grilled meat, to plum sauce, to chocolate cake with a rich pear buttercream frosting are just a few of the ideas proposed by those who have tasted this exquisite tea.
The flavor is complex, with a pleasant astringency. Both chocolate and cocoa are found here, with cocoa being predominant, followed by raisin and mild chile. The overall flavor is rich and mouth-filling and the body is deep and satisfying.
Brewing Guide: Use one brick of tea for every 200 ml of water. Steep tea leaves in hot water at 100°c (212°F) for 1 minute for the first and second brewing. Gradually increase steeping time and water temperature for subsequent brewing.
