Jin Shan Shi Yu is a top-grade green tea, which was created in the Daoguang period of the Qing Dynasty, and its original name was "Jinshan Mingwu". The name of Jinshan Shiyu has two meanings: one means that the finished tea looks like rain, and it was picked before and after the Grain Rain; the other is that it is produced in Jinshan Village, Jixi County. Most of the Jinshan tea gardens are located on hillsides with an altitude of 500 to 900 meters. The main tea tree is the local fine variety Jinshan species, which has a stretched crown, thick buds, many and obvious pekoe, and contains many types of organic components. Jin Shan Shi Yu is a fried green tea, which has relatively high requirements for picking and processing. It is picked around Guyu in spring season, and the standard is one bud and two early leaves. The production is all traditional manual operation, which is roughly divided into three processes: finishing, kneading and drying. As early as the end of the Qing Dynasty, Shi Yu was exclusively distributed by Shanghai Wangyutai Tea House. By the early years of the Republic of China, Shi Yu had been sold to more than ten countries and regions including Hong Kong and Singapore.

The appearance of the tea is fine and elegant, which belongs to high-grade fired green tea. The tea is manufactured by one bud with two leaflets, and the liquor shows green yellowish color, sending forth a mellow and sweet fresh aroma.

The liquor is pale emerald, fresh, and oily-thick, and it is an interesting blend of chestnut notes with a sweetly verdant broccoli-ish aroma. Sweet, soft yet savory, the infusion caresses the palate with a velvety medley of flavors, evoking a freshwater mineral pool in a forest grove. It is a pleasantly fragrant tea, the leaves steaming a complex vegetal and buttery scent with the prevailing note of boiled sweet potato.The tea has a toasty edge, and there is a constant, pleasant sweetness to it with floral notes lingering on the palate. It leaves a fresh and slightly dry mouthfeel.

Brewing Guide: Prepare 3 g of tea leaves for 150ml of water. Place the tea leaves into a warmed glass. Let the boiled water to cool down to 75-80 degree C. Brew for 2 minutes and serve.
