Product Overview
The raw material of Shimen Yinfeng tea comes from Yunwu Mountain at an altitude of 500-1000m at the east end of Wuling Mountains on both banks of Shimen County in the northwest of Shimen County, Changde City, Hunan Province. The atmosphere, soil, and water sources around the tea garden are free of pollution.
This tea has a distinct pine-needle appearance and a more full-bodied taste with a lingering sweetness. The appearance of the young tea leaves when they are plucked – they are covered with tiny ‘hairs’ or ‘fur’. Downy tips is a classic green tea that is very high in amino acids and initially smells and tastes like Japanese tea. Each tea leaf is hand-picked and very labor-intensive.
These buds picked in early spring are very fine and have an amazing aroma. Upon pouring water over it, the tea emits a wonderful fragrance and we can enjoy its deep flavors. This Shi Men Yin Feng tea opens up with a rich, grassy vegetal flavor, savory upfront with a warm sweetness that lingers afterward and then deepens in later steeps. It has an incredible amount of umami on the first taste that changes quickly into the signature floral with a sharp bite taste. It has a classic green tea profile with green grass notes and an underlying sweetness, with that delicious umami finish.
Brewing Guide:
1. Prepare 3 g of tea leaves for 150ml of water.
2. Place the tea leaves into a warmed glass.
3. Let the boiled water to cool down to 80-85C. Green tea leaves prefer a slightly cooler temperature as compared to black or oolong tea.
4. Gently pour water onto the leaves. The quantity of water should be 1/3 of glass (about 50 ml), or merely enough to cover all the leaves.
5. After one minute, pour in another 100 ml of water. When pouring the water.Brew for 2 minutes and serve.
6. If the taste is too strong, add hot water to the glass.
