Zheng Shan Xiao Zhong is an ‘unsmoked’ counterpart to Lapsang Souchong from Wuyi Shan. Growing in the original birthplace of black tea - the Wuyi mountains, the tea bushes enjoy year-round rich forests, heavy mist, and the freshest mountain water. Wuyishan area is also famous for its rock oolongs, such as Da Hong Pao, Shuixian and Tie Lou Han. Although they both grow up in Wuyishan, the locations are far apart.
The processing and roasting of this tea were done with the intention of creating a black tea that would be full-bodied, aromatic, yam-like, sweet, and slightly toasty, just like a baked sweet potato.
Masterful tea processing has resulted in a slightly sweet chocolate aroma, dried date fruity body, thick, strong cup with delicious toasted notes of yam and a satisfying, full-bodied finish.
Brewing guide: The water used to steep this tea should be at the boiling point, 212F (100ºC). Use about 2 teaspoons (3 grams) of tea leaves for about every 5 ounces (150 milliliters) of water. A steeping time of about 3-5 minutes with more or less time is recommended depending on the desired concentration.
